Any Pinterest fans reading this? Duh…of course! Pinterest can be an amazing source for recipes, but sometimes I get discouraged when I see all of the recipes I miss out on because of food allergies. But, I decided that I am not going to feel sorry for myself!

I am convinced that just about anything can be made for people with food allergies as long as you have creativity, ingenuity, and you aren’t afraid to make a few mistakes in the process.

I have seen plenty of recipes for protein cookies on Pinterest and I have made a few versions before but none of them worked out well for me or tasted good with my substitutions. Very disappointing!

I was craving cookies yesterday and wanted to have a healthy, protein-packed version for myself so I started from scratch and created my own nut-butter protein cookies that don’t have eggs or whey powder in them.

These cookies turned out perfect! They are soft, flavorful, and delicious, and best of all, healthy! They are an excellent treat if you want some cookies with benefits.

You can add some mini chocolate chips to this recipe to add some flair, or you can completely skip baking these and make cookie dough truffles (irresistible!!). If you want to make these vegan, use agave or maple syrup in place of the honey, just don’t add the Tablespoon of milk.

Nut allergies? No worries: just use SunButter in this recipe and adjust the amount of protein powder if your SunButter is a little runny.

Ingredients

  • ½ cup almond butter
  • 2 Tablespoons thick honey for vegan, use maple syrup
  • 3 Tablespoons ground flax seed or ground chia seed
  • ½ cup SunWarrior Vanilla protein powder
  • 1 Tablespoon almond milk
  • 1 teaspoon vanilla

Instructions

  • Preheat oven to 350 degrees F.
  • In a medium bowl, beat almond butter and honey together with a hand blender.
  • Beat in the flax meal, protein powder, almond milk, and vanilla until well blended.
  • Scoop cookie dough by level Tablespoons onto a parchment-lined cookie sheet and flatten with a fork.
  • Bake for 10 minutes. Let cool thoroughly on a wire rack.
  • Enjoy!

    I bought a tub of Sunwarrior protein and never enjoyed making smoothies with it’s the texture was way too gritty so I was excited to try baking with it after seeing your post. these cookies seem so delicious. But this recipe was a total fail for me.
    I followed to t but the dough was a too dry and it wasn’t coming together well so I had to added more liquid.
    I don’t know if it’s the brand of Almond butter I used but a lot of oil started to seep out of it while baking.

    • Sorry this didn’t work out for you Aron, I appreciate the feedback! It has been quite a long time since I developed this recipe and made it again myself, so I’m not sure if I can help pinpoint what might have gone wrong. It’s possible it was the almond butter, but I can’t say for sure since brands can differ in thickness/oil content. This is one of the recipes I hope to remake at some point to improve it and make the results more consistent for people, but I can’t have brown rice protein powder anymore so I have been putting off remaking it since I’m not sure what to use to make them again (most protein powders are off the table for me these days).

    I had to add liquid to be able to physically stir it. When making, think about how thick or runny your almond butter might be compared to other brands. As long as it doesn’t get runnier than peanut butter, I think you can add liquid to make this recipe an easier consistency

    • Hi Lydia, I haven’t made these without protein powder, but you could try using almond flour or maybe some rice flour (maybe less) instead of the protein powder to see if that would work (but I can’t guarantee the results since I haven’t tried that)

    • Hi Christina! These are a softer cookie, and you can certainly use peanut butter in place of almond butter if you like 🙂

    • Sure! I just added the carb count to the nutrients: 7 g, which is mostly from the honey. If you wanted less, you could use liquid or powdered Stevia instead of honey.

    • Hi Elle! SunWarrior is a brand of brown rice protein powder. It is the brand I use and it is one of the best protein powders for people who have sensitivities to dairy, soy, eggs, and legumes (like me!). I am sure you could use just about any kind of protein powder in this recipe with good results if you wanted to use something different 🙂
