School is just around the corner! for some of you, school has already started, but for us, school begins next week. In the middle of the week no less (Wednesday). I still haven’t figured out why they do that… starting school on a Monday seems convenient and practical to me, but start dates aren’t decided by us parents I guess 😉
 
So , what do you pack for kids who have food allergies and the most protein they get in their lunchbox is usually in a sandwich? I don’t get very creative during the school year for our kids’ lunch boxes, so lunchbox protein sources for them are usually lunchmeat or tune since dairy, eggs, and nuts are off the menu.
 
These Chai Spice Protein Bites double as a little dessert or snack with added protein – perfect! My kids love these bites, and I love that they are getting some protein and fiber with their snacks, too.

These bites make nice cookie alternatives if you are craving something sweet but want some protein, too. Another idea for this recipe is to press the dough into a square about 1/2-inch thick and cut into 4-5 bars to make a more substantial protein bar. Just wrap in parchment or waxed paper and you are ready to pack these tasty treats in a lunch box!

I used my pumpkin seed protein powder and hemp protein powder for these bites. I prefer the Hemp Pro 70 since it’s not as gritty as the regular stuff, but I was out of that kind and used what I had.
 
If you decide to use a finer hemp protein powder, just make sure that you adjust the liquid accordingly: the finer protein powder will soak up more liquid so you may need to add some milk or more honey to your recipe.
 
The green shades of the pumpkin seed protein powder and the hemp protein powder look a little odd and make the protein bites a dark green color, but the Chai Spice Protein Bites taste awesome even if they are a little green 😉

I was going to make these with almond butter, but decided to make these nut-free so my kids could enjoy them. I used SunButter, but you could use just about any nut or seed butter you like for these.
 
I also made my own chai spice mix, so you will need to adjust the amount of chai spice mix you use depending on the kind you decide to use. I used this recipe for the chai spice, but I am sure you could buy a good chai spice blend if you didn’t want to mix it up yourself.

  • In a medium bowl, whisk together the protein powders, chai spice mix, and salt.
  • In a small bowl, mix together the honey, SunButter, and vanilla. You can warm the honey if needed to make it mix better
  • Add the SunButter and honey mixture to the protein powder and mix well. A stiff dough should form. If the dough seems dry, you can add rice milk or coconut milk to the dough 1 Tablespoon at a time until it sticks together well.
  • Roll into 12 balls and enjoy!
  • Store in a sealed container in the fridge

    • The pumpkin seed protein powder is pretty good – a little bit gritty, but it has a nice taste and it’s grain-free. I would love to see this in a finer grind that actually dissolves, but this is good for now 🙂

  3. I like the flavor of hemp protein and I know exactly what you mean about the grittiness…doesn’t make for the world’s prettiest smoothie, hahaha. I’ll have to look for the brand you mentioned in the post.

  4. I’m so chai obsessed lately! I’ve had to resort to making my own chai tea latte concentrate so I don’t spend all my money at starbucks! Loving the idea of rolling all those flavors up into a doughy ball!
