It’s time for the July Recipe Redux! I missed last month’s Recipe Redux theme since we were super busy, but this month has calmed down a bit and I was able to do it this time (yay!). Recipe Redux has changed a bit and we now get to choose which day we want to post our recipe (either the 21st or 22nd of each month), so I can make it fit my schedule better.

For this recipe, I decided not to go with zoodles since they’re so popular, so I decided to go with fruit. I’ve seen some fun ways to serve fruit on kabobs, and I’ve had some fun with cutting shapes out of watermelon slices before, so I decided to combine the two into one fun treat: Fun Fruit Kabobs with shapes.

I used some very small cookie cutters I had for this fruit since cantaloupe and kiwi don’t have a ton of space to work with. My small cookie cutters are about 1-1/2 inches across, so they are perfect for this. The kiwi was really tricky to cut, not only because it isn’t very big, but also because the core in the middle of the kiwi can be tough.

At first I wasn’t sure if I would be able to find skewers quite the right size for this, since toothpicks are too small and our regular kabob skewers are really long for the grill, but I found some cool cocktail stir sticks that work perfectly for this! They’re sparkly, fun, and just the right length for fruit kabobs.

These Fun Fruit Kabobs are a fun way to get kids to snack on fresh fruit! These can pack well in a lunchbox with a cold-pack, and they would be great to serve dipped in dairy-free yogurt. Yummy!

Ingredients

  • 2 cups cubed melon, your favorite kind (honeydew, watermelon, or cantaloupe)
  • 2 to 3 kiwi fruit
  • ½ pound grapes washed
  • 1 cup small strawberries
  • Any other fruit you like: raspberries, orange slices, etc.
  • Small cookie cutters about 1 to 2 inches in size in simple shapes

Instructions

  • Cut your melon open and scoop out the seeds if you’re using a honeydew or cantaloupe, and cut off the rind
  • Peel the kiwi and set aside
  • Slice the melon and kiwi into 1/2 thick slices
  • Using your small cookie cutters, cut shapes out of the melon and kiwi slices. This works best if the cookie cutters are simple shapes
  • Arrange the fruit in any pattern you like on skewers or cocktail stir sticks
  • Serve immediately and enjoy!
