Hey friends! It has been a few days since I have posted anything since I am working on a fun project and I took an easy couple of weeks around Christmas and New Years. I haven’t posted a News and New Things post in a while so I decided to share some of the stuff I’m working on and things I have planned for this year!

Big Horn Trail Run

We signed up for the Big Horn Wild and Scenic 18-mile trail run in June! This will be the farthest distance I have run so far. Several of my coworkers have run the race and say it’s well supported and beautiful. The 18-mile is also popular with power walkers, too, so it’s not a high-pressure race or anything.

We are going to go and enjoy the run! I have been working on getting my running mileage up reasonably (i.e. slowlyconsidering my susceptibility to tendinitis, and we will have 5-6 months to train for this so that will be a good amount of time to build up my mileage without injury and with proper fueling.

This is the longest race I have signed up for, and we don’t have a lot of trail options right here close (we have to drive 1+ hours one way to get to come good mountain trails) so this will be a good stretch for me! I was concerned about how my body will respond to the race due to my interstitial cystitis, but I won’t know until I go and do it.

My pain levels have been a quite a bit better since I started taking my medication regularly again, so that’s a good thing! The biggest thing will be fueling and making sure I’m not eating anything that can cause a flare. 

The 18-mile run registration filled up super-fast: over 100 people registered locally early, and the online registration filled up in about 3 minutes. I think there is a there is about 350 person limit (I couldn’t find out for sure) for the 18-mile race and it’s a popular race so it went fast. I was lucky to get us registered! Next time I will show up in Sheridan to get registered early.

One of the trails we have right here in town is pretty mild, nothing too gnarly. Right now it’s covered in snow and that gets interesting… It’s easy to twist my ankles when I’m running on the uneven snow once it starts to harden a bit.

Fitter Faster Interview

I have been helping beta test a new workout app that is coming soon called Fitter Faster. They set up an interview with me a few months ago and my interview video and transcript is up! Writing an eBook!

I’m working on an ebook to sell! Here’s a page from the ebook I’m working on. I’m still working on it, so it’s not finished yet, but once I get it completed I’ll post it. I will hopefully have it ready to go in the next few weeks. Stay tuned!

This ebook will be all about quick and easy no-bake snacks and treats that are allergy-friendly (all of them are gluten-free!). If this book goes over well, I might also write one with some workouts. And who knows, maybe I’ll write a full cookbook one of these days 😉

The format isn’t finished yet (I’ve already made some changes), and I’m putting in more recipes, but so far it’s coming along nicely. This is my first ebook, so it’s all new to me, but I’m learning by doing. 🙂

Misc. stuff (Tiger nuts, vegan chocolate, and #BestNine)

I got to try some tigernuts that I bought at WholeFoods last month. Interesting! Not sure how to describe these, they are like a chewy and not-crunchy nut that tastes a bit like peas. I need to experiment a bit with these and see if there are any good ways to cook with them. I think there is tigernut flour out there that would be interesting to try!

My sister gave us some great chocolate for Christmas last month and I had to share it! I couldn’t eat much of it due to my IC, but I did have a little bit and it tasted amazing. It’s sweetened with agave (not low-FODMAP but low glycemic), and made in a dedicated gluten and nut-free facility.

The caramels are delicious and non-dairy! It’s vegan (so dairy and egg-free) and very high quality. I highly recommend trying this chocolate if you have food allergies (and even if you don’t have food allergies – it’s still amazing!).

Just for kicks, I found my #2015BestNine photos on Instagram. Mostly food photos, go figure! I don’t like to post a lot of photos of my husband and kids since I really don’t want them floating around the internet too much, and I’m not a big selfie person, so food and fitness photos are mostly what’s there!
