This recipe is super simple but full of flavor. Just freeze dried fruit and coconut cream is all you need. And maybe a little bit of Stevia if you want it sweeter, but we found that the level of sweet and tart was perfect for us.

Another great thing about this dairy free mousse is that since it’s made with freeze dried fruit, you can make this dessert any time of year! You don’t have to wait for these fruits to be in season to enjoy this allergy friendly and amazing treat.

While this recipe has no added sugars and is allergy friendly, this fruit mousse is nutrient dense and is not low calorie. I recommend layering this in small glasses or shooter cups if you’re watching calories.

How to make dairy free fruit mousse

Making our layered fruit mousse is very simple and only takes a few ingredients: California Gold Nutrition® freeze dried fruits from iHerb (we used pineapple, dragon fruit, strawberries, and blueberries), and canned coconut cream.

Make sure to use coconut cream in this recipe and not coconut milk! Also, do not use cream of coconut, this is different than coconut cream. Cream of coconut is generally sweetened and is packaged for drinks and cocktails. Coconut cream comes in a can typically and is thick and unsweetened.

Before mixing up your dairy free fruit mousse, make sure that your canned coconut cream is thoroughly mixed. Oftentimes, canned coconut milk and cream will separate, making a super thick layer and a watery layer. If your coconut cream is separated, put it in a small blender to mix well before making this recipe.

To keep the colors of this layered fruit mousse separate but still use only one blender/processor and one mixing bowl, process and mix the lightest colored fruits first, then progress to the darkest fruit.

Use this method for mixing your fruit powder and coconut cream as well: mix the coconut cream with the fruit powders from the lightest fruit to the darkest fruit.

For this recipe, I powered and mixed the fruits in this order: pineapple first, then dragon fruit, next strawberries, and last blueberries. Doing it this way helps to keep the colors from mixing and you still only have to use one blender/processor and one mixing bowl!

Variations for layered fruit mousse

You can add the dragon fruit mousse to the top of the layered mousse as a sort of fruity “whipped cream”, or you can add it as a layer of mousse to the top or bottom of the fruit mousse. I preferred adding it as a topping/garnish on the layered fruit mousse.

Because the dragon fruit is white with black seeds, the dragon fruit mousse looks a bit like cookies and cream, pretty cool!

If you don’t want to do 4 fruits in this paleo mousse, you can mix and match your 2 favorites instead. We loved the pineapple and strawberry mousse the best, so a strawberry and pineapple mousse would be really delicious, either blended together or layered. Have fun with this recipe!

  • Using a food processor or NutriBullet, process the freeze dried fruits (from lightest color to darkest color) and keep the fruit powders separate and in separate bowls. I processed the pineapple first, then dragon fruit, then strawberries, and last the blueberries. This helps to keep the darker colors from getting into the lighter colored fruit powders so you only have to use one blender/processor and one mixing bowl while keeping the colors separated.
  • Starting with the lighter colored fruits, use a hand blender to mix together the fruit powder and 1/2 cup of coconut cream. So begin with the pineapple powder and blend it with 1/2 cup coconut cream, then return it to its bowl.
  • Next, blend the dragon fruit powder with 1/4 cup coconut cream, then put it back into its own bowl.
  • Blend the strawberry powder with 1/2 cup coconut cream and set it aside in its own bowl.
  • Last, blend the blueberry powder with 1/2 cup coconut cream and set aside it its own bowl.
  • Prepare small glasses, mini ramekins, or shooter glasses for the mousse, dividing each fruit mousse evenly between your chosen number of serving dishes.
  • First layer the blueberry mousse on the bottom, then the pineapple mousse, and the strawberry mousse, spreading evenly between each addition, making sure not to mix them.
  • Top with a dollop of dragon fruit mousse/coconut cream mixture and place in the fridge to chill and thicken up. This will be thick to start, but will thicken up as it chills and the fruit powders absorb liquid.
  • Chill for about an hour or until thick. Serve and enjoy!
