The last time I posted a popsicle recipe (a fudge pop recipe) was several years ago, and it’s about time I actually posted another one. Honestly, I’m not great about posting seasonal recipes, but I’m getting better! I plan on posting more popsicle and ice cream recipes this year (yay!!), starting off with these Strawberry Mango Popsicles!

To be completely transparent, I’ve also neglected to do more blog posts the past couple weeks since I’ve been working on some projects. I working on getting back to my regular writing/posting schedule again this week, but the last few weeks have been a little sparse for posts and recipes.

Over the last few months (since March and April), I’ve been working on an online group workout program that I plan on launching in July. This is a big step for me since I’ve never done anything quite like this before, and it’s a little bit scary, but I’m ready to take my blogging and fitness business to the next level.

I’d eventually like to hire a business coach, but right now the budget won’t allow it just yet (I have some great business coaches and programs in mind!). In the meantime, I’m going to work on launching this program as best I can, start simple, and go from there.

Speaking of budgets, if you’re on one, then you’ll love the popsicle molds I found: 94 cents at Walmart! I wanted to get some nice rectangle ones and I went to all kinds of stores around our small town looking for some, and we ended up getting these small round ones (they hold just over 1/4 cup liquid).

They really aren’t the super cool-looking ones you see on Pinterest, but whatever 😉 They still get the job done and don’t cost a fortune. I’m pretty sure I saw identical ones on Amazon for like $9, so if you want this kind of popsicle mold, just go get them at Walmart for a less than $1.

If you want the best tasting homemade popsicles, you need to get the best tasting fruit. Bland fruit makes bland popsicles unless you add some other extra flavoring, which I avoided doing in this recipe.

If you are having trouble finding good mangoes, try the smaller more tart mangoes (the ataulfo variety). They seem to have a fruitier mango taste than the big ones, but they can be quite tart!

Instructions

  • In a blender, puree the fruit and the canned coconut milk together until smooth
  • Pour into prepared popsicle molds and freeze overnight or until set
  • Store in the freezer in a sealed container
  • Enjoy!
