2large poblano peppersseeds and membrane removed, diced
1small yellow squash or zucchinidiced
¼small onionfinely chopped
1clove garlicminced
¼cupcilantrofinely chopped
Zest of 1 lime
1Tablespoonlime juice
Hot saucegarlic powder, salt, and pepper (to taste)
Instructions
Remove the seeds from the tomatoes and poblano peppers and dice. Dice all the vegetables and mix together with the garlic, cilantro, lime zest and juice, and seasonings. Enjoy!
