cup
chopped red bell pepper
1
Tablespoon
diced shallot
1
Tablespoon
oil of choice
2
eggs
1
Tablespoon
milk
Pepper
to taste

Tablespoons
grated Gruyere cheese
1
Tablespoon
sliced green onion
Instructions
Place the chopped bell pepper and diced shallot in the deeper part of the Lékué Omelet maker and pour the oil over the vegetables.
Close the omelet maker and microwave for 3 minutes.
Meanwhile, whisk together the eggs, milk, and black pepper until well blended.
Remove the omelet maker and pour the egg/milk mixture into the deeper well to cover the vegetables.
Return omelet maker to microwave and cook 2 more minutes. The eggs will puff up slightly, but this is normal.
Flip omelet maker over and cook another 30 seconds.
Remove omelet from maker (careful, it's hot and steamy!) and place on a plate. Top with gruyere cheese and green onions.
