Ingredients

ripe fresh Hass avocados
diced

large green pepper
seeded and chopped
1
medium cucumber
peeled and chopped
⅓
cup
apple juice

Tbsp.
fresh squeezed lemon juice
Zest of 1 lemon
½ to 1
cup
water
to make gazpacho pouring consistency
To taste: salt
pepper, cayenne, garlic powder
Instructions
Place all ingredients in a food processor and blend until smooth. Add more water as needed to make the gazpacho the consistency you like.
Chill in the fridge or serve immediately.
