Heat up your grill for about 5-10 minutes, scrape your grill, then reduce the heat to medium/medium-low.
Smash the avocado, then mix the artichoke spread into the avocado.
Divide the avocado/artichoke mixture evenly between the 2 slices of bread and spread evenly.
Add the natural sliced deli meat to the sandwich and top with the dairy free smoked gouda. Put the sandwich together.
Spread a thin layer of Earth Balance Soy Free Margarine on the outside of each slice of bread on the sandwich (the sides that will be facing the grill).
Grill the sandwich on indirect heat (away from heat source) for 2 minutes on each side to melt the cheese. Being careful as you turn it so you don't mess up your sandwich.
Then cook for 1 minute on each side on direct heat (on the main grill grate) to crisp the bread.
If you don't have a grill or prefer not to use one, you can grill this sandwich on a pan or griddle that's been heated over medium heat. Cook for about 2-3 minutes on each side, or until the bread is golden brown and crispy.
