Paleo Layered Fruit Mousse (Vegan)

  • Using a food processor or NutriBullet, process the freeze dried fruits (from lightest color to darkest color) and keep the fruit powders separate and in separate bowls. I processed the pineapple first, then dragon fruit, then strawberries, and last the blueberries. This helps to keep the darker colors from getting into the lighter colored fruit powders so you only have to use one blender/processor and one mixing bowl while keeping the colors separated.
  • Starting with the lighter colored fruits, use a hand blender to mix together the fruit powder and 1/2 cup of coconut cream. So begin with the pineapple powder and blend it with 1/2 cup coconut cream, then return it to its bowl.
  • Next, blend the dragon fruit powder with 1/4 cup coconut cream, then put it back into its own bowl.
  • Blend the strawberry powder with 1/2 cup coconut cream and set it aside in its own bowl.
  • Last, blend the blueberry powder with 1/2 cup coconut cream and set aside it its own bowl.
  • Prepare small glasses, mini ramekins, or shooter glasses for the mousse, dividing each fruit mousse evenly between your chosen number of serving dishes.
  • First layer the blueberry mousse on the bottom, then the pineapple mousse, and the strawberry mousse, spreading evenly between each addition, making sure not to mix them.
  • Top with a dollop of dragon fruit mousse/coconut cream mixture and place in the fridge to chill and thicken up. This will be thick to start, but will thicken up as it chills and the fruit powders absorb liquid.
  • Chill for about an hour or until thick. Serve and enjoy!
