Preheat your nonstick griddle or pan (or generously oiled cast iron griddle) over medium heat until water droplets sizzle on it. For electric griddles, set it to 325 or 350.
While the pan or griddle is heating up, prepare the french toast. Whisk together your eggnog, gluten free flour blend, and oil in a wide dish that's big enough to fit your slices of gluten free bread in it.
Allow the batter mixture to rest for a couple minutes to thicken a bit.
Dip your bread slices in the eggnog mixture, allow to sit in the mixture for about 5 seconds to allow it to soak up some of the batter, then flip and do the same on the other side.
Remove the bread immediately from the batter and add it to the oiled pan or griddle. Cook until it is golden, then flip and cook on the other side until it is golden and lightly browned. Repeat for all slices of gluten free bread.
Serve immediately with dairy free butter and maple syrup!
