Make your strawberry powder first: add about 1 cup of freeze dried strawberries to a small blender or food processor and process until it's mostly powdered.
Sift the strawberry powder to remove the bigger pieces and most of the seeds. Set aside the strawberry powder (you'll need 2 Tablespoons for this recipe).
Use oil, coconut oil, or dairy free butter to grease the bottom and sides of an 8x8-inch square baking pan. Set aside.
In a 2-quart saucepan, melt the dairy free butter over medium low heat.
Once the dairy free butter is completely melted, add the marshmallows and keep cooking over medium-low heat, stirring constantly, until the marshmallows are melted, smooth, and completely mixed into the dairy free butter.
Remove from the heat and stir in the strawberry powder until smooth.
Add the crisp rice cereal to the pan and stir until it is combined well with the strawberry marshmallow mixture.
Gently press the rice crispy treat mixture into the bottom of the prepared pan, making sure not to crush the cereal.
While the rice crispy treats are cooling in the pan, melt the dairy free white chocolate and drizzle over the top of the rice crispy treats.
Once the strawberry rice crispy treats are cooled and the chocolate is set, remove them from the pan and cut into squares.
Store in an airtight container at room temperature for up to 3 days (if they last that long!).
