100% pineapple juice, to make the blending easier*
Instructions
Peel and slice several ripe bananas into a freezer bag or freezer safe container and freeze for several hours or overnight until they are completely frozen.
In a blender (preferably a high powered one that can handle frozen foods), add all the ingredients and a little bit of pineapple juice and blend.
Add additional pineapple juice as needed to make it easier to blend. If your blender isn't powerful, you might have to use a little bit more pineapple juice. Start with a little bit of juice and add more as needed to help with blending.
Stop the blender and scrape down the sides, then blend again until it's smooth and has a soft serve consistency.
Serve immediately or put into a freezer safe container to freeze fully for later.
If you freeze this for later, allow it to thaw a little bit on the counter at room temperature or microwave for 30-40 seconds to soften for easier scooping.

Notes
*Depending on your blender, you may need 1 to 4 Tablespoons of pineapple juice. If your blender isn't a high powered one, you might need a little more pineapple juice than if you had a powerful blender. Add a little pineapple juice at a time (about 1 Tablespoon) until it blends well and is a thick soft-serve consistency. To make this recipe without bananas:
2 1/2 cups frozen pineapple
1/2 cup frozen dragon fruit cubes
1/2 cup canned coconut milk
Juice from 1/2 lime
1 to 2 Tablespoons maple syrup
Splash of pineapple juice as needed to aid blending
Follow the same instructions for the recipe with bananas.
