Our easy smoked salmon appetizer roll ups are so easy to make and are perfect for not only appetizers, but make great snacks and lunches, too! Wash your cucumber and cut off the ends, leaving the peel on.
With a vegetable peeler or mandolin slicer, slice the cucumber lengthwise to get long thin strips of cucumber.
If your cucumber strips are pretty thin, layer 2 cucumber strips on top of each other.
Use a paper towel to blot excess moisture off the top of the cucumber strip and spread some of the french onion dip or softened cream cheese on the cucumber strips.
Add thin slices of smoked salmon on top of the dip/cream cheese and roll up. You can secure with a toothpick if you like, this isn't always needed however.
Serve immediately or store in an airtight container in the fridge for serving later.

*Or softened cream cheese mixed with chopped chives. The Violife french onion dip is quite thick, like softened cream cheese, so if you need a replacement, opt for softened dairy free cream cheese mixed with chopped chives.
