Ingredients
1rotisserie chicken
¼cuphomemade or organic mayonnaise
1tablespoonwhite wine vinegar
¼teaspoonpepper
¼cupthinly sliced fresh basil
¼cupchopped cashew halves and piecestoasted
2medium cucumberssliced
Instructions
Remove breast, thigh, and leg meat from chicken; discard bones.
Chop meat into bite-size pieces.
Combine chopped chicken, mayonnaise, vinegar, salt and pepper in a large bowl; toss well to coat.
