Our gluten free and dairy free version of the viral baked feta pasta makes an easy and fuss-free weeknight meal! You can round out this dish with added protein as well, such as chicken sausage, for a complete dinner.Gluten free, dairy free, vegan (if not adding sausage)

Fresh basil and oregano, to taste (I used about 1 Tablespoon lightly dried Italian herb mix from Gourmet Garden)
Instructions
Preheat oven to 400 degrees F.
Add 2 cups of washed cherry tomatoes to a 9x13-inch baking pan and add the olive oil, pressed garlic, fresh thyme, smoked salt, and black pepper.
16 ounces cherry tomatoes, 1/4 cup olive oil, 2 cloves garlic, pressed, 1 Tablespoon fresh thyme leaves, 1/4 to 1/2 teaspoon smoked salt, 1/8 teaspoon black pepper
Stir the tomatoes with the oil and herbs. Make a space in the pan for the dairy free feta cheese block and scoop some of the oil and herbs on top of the cheese.
6.5 ounces dairy free feta cheese block*
Bake for 30 minutes.
While the tomatoes and feta are cooking, heat a pot of heavily salted water and cook the gluten free pasta according to the package directions. Drain the pasta once it's cooked.
6 ounces Jovial gluten free fusilli, Salt for the pasta water
When the feta and tomatoes are done, remove them from the oven and add the pasta to the pan along with the chopped basil and oregano and stir everything together.
Fresh basil and oregano, to taste
Sprinkle some more chopped basil on top of the pasta and serve.
This is delicious with chicken sausage added for more protein.

* Daiya feta cheese is preferred in this recipe, however Daiya has discontinued their feta block. Good Planet feta will work (not my favorite flavor), but I have heard from people on Pinterest that Violife feta does work in our recipe. I have also tested this recipe out with the Laughing Cow plant-based spreadable garlic & herb cheese and the Babybel plant based cheese and both work great in this recipe.
