Ingredients

2 cups King Arthur gluten free all-purpose baking mix
2 Tablespoons unbleached cane sugar
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1-3/4 cup dairy free milk
¼ cup light tasting olive oil
1 Tablespoon vinegar

Instructions

Preheat your non-stick waffle iron.
In a large bowl, whisk together the gluten free flour, sugar, baking powder, baking soda, and salt.
2 cups King Arthur gluten free all-purpose baking mix, 2 Tablespoons unbleached cane sugar, 2 teaspoons baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt
In a small bowl, whisk together the dairy free milk, oil, and vinegar.
1-3/4 cup dairy free milk, 1/4 cup light tasting olive oil, 1 Tablespoon vinegar
Add the liquid ingredients to the dry ingredients and whisk together until mixed well.
Pour batter into your hot waffle iron according to the amount that your waffle iron will hold. We pour batter into our Belgian waffle maker using a 1 cup scoop.
Cook in the waffle iron for 4 to 4-1/2 minutes.
Top with your favorite dairy free butter and toppings.

Notes

*Gluten free all purpose flour and all purpose baking mix are slightly different. The King Arthur Flour baking mix has xanthan gum and salt in it, while their gluten free all purpose flour does not have those things added. We are using the all purpose baking mix in this recipe, not their all purpose flour.
