Oooh yum! Grain free chocolate chocolate-chip mini muffins 🙂

If you’ve been craving donuts but don’t have a donut pan, try making mini muffins instead and just call them donut holes. Gigi recently posted a recipe on her blog for donuts and I had to try them!

But I needed come chocolate to mask the hemp powder (that stuff is scratchy…) so I made my own version. I followed this recipe from Gigi (which was originally created by Sarah Grace), but made a few modifications:

  • I used hemp protein powder
  • I used chia protein powder in place of the flax meal. If you have never heard of or used chia protein powder, it gels up like crazy! It’s perfect for egg-free baking and has lots of fiber and less fat, too
  • I added 1/4 cup cocoa powder
  • I added 1/4 cup coconut sugar (probably could have skipped this, but wanted more sweetness)
  • I added 1/4 cup mini chocolate chips
  • I baked in mini muffin pans (made about 2 dozen) for 20-25 minutes at 350º F. You could bake these for only 20 minutes if you want them to be a bit fudgy inside

These turned out yummy! And my kids could have these too, which is even better. These would taste great with some homemade donut glaze on top…

  1. Hey, these look SOOOOO good. I am going to make them this weekend. I only have whey protein though, no hemp : (

    • I’m not a big fan of hemp protein – maybe I just haven’t found the right kind I guess. But the chia protein isn’t too bad: it’s a bit gritty, maybe not something I would put in a shake but it works great for baking

    • It’s not too bad! Basically chia powder with the fat mostly removed so it’s mostly fiber and protein, but it still gels up really good! It worked great in this recipe 🙂
