Who is the most amazing person in your life?
That is kind of unfair, it is like asking your parents who they love the most – you or your sister (totally me, every time). In all honesty though, I just celebrated the birthday of one of the most amazing ladies to ever walk this planet.
I know, I know… everyone’s Grandma is the best. Only thing is, mine really is (okay… tied for first place with yours 😉 ).
My Grandma looked after all of us grandkids: day after day, school holidays, after school, before school…. she dealt with crying school refusers (hehe… who would have thought that person would turn out to be a teacher?!), a couple of Grandkids breaking out into a full on fight at the Easter church service about whether the priest was really a father – during the quietest time of prayer (I think someone probably got a few kicks in the shin), and up ending of full grocery trolleys because we all wanted to be on the same side.
Then you have all of the days we were too sick for school, the mega liters of chicken noodle soup that has been made, cuts cleaned, bruises kissed and the countless cuddles, shoulder to cry on and constant love.
Grandma is the kind of grandma everyone wants. Kids down the road would call her grandma and, it annoyed me when I was little. She is mine, not yours…
But now I realize how lucky I am…
While I am on a roll, she also gave me a few complexes… like, if you swing too high on the swing- you’ll fall and break your neck, never be on the phone (or near windows ) during a storm – you might die (that one scared me for awhile) and if you don’t eat enough, you must be sick 😉
She has had the most amazing life full of hard work, sadness, courage, love … one that I think if I was faced with, I couldn’t cope.
Yet, here she is… and she is amazing… and still looking after us all (every time I visit I come back home with frozen home cooked meals for mid week when I am too tired or fresh fruit and vegetables from the garden… or the latest plant she has grown and re-potted for me).
I’ll be honest, this Healthy Chocolate Protein Mousse recipe has NOTHING to do with that story, except perhaps – like at any good Hungarian function we had mountains of food, way too much, and I ate way too much… and since I can’t say no to chocolate, I need healthier alternatives and this one is a regular at my house.
So Grandma, Happy 90th Birthday… I love you.
Healthy Protein Chocolate Mousse
Ingredients
- ½ cup Greek-style non-dairy yogurt (low sugar or unsweetened if possible)
- ¼ cup unsweetened almond or coconut milk
- 1 Tablespoon (heaping) dairy-free chocolate protein powder
- 1 Tablespoon raw cacao/cocoa powder
- 1 teaspoon psyllium husks
- Stevia drops, to taste
Instructions
- Combine all of the ingredients and mix until well combined.
- Cover and store in the fridge for a couple of hours or overnight.
- Depending on your protein powder, you may need to slightly increase the amount of milk if it absorbs more water than the brand I have used.
