Drink your way through the rainbow with healthy smoothies! Brighten your day with this delicious and sunny Yellow Sunshine Smoothie that’s paleo and vegan
It’s been a little while since my last recipe for my Drink the Rainbow series. If you missed it, the one before (and the first recipe in the series) was the Green Goodness Smoothie. As I have said before, I am SO not good about drinking smoothies or juicing – I prefer solid food. I am not even a big soup person.
But, smoothies and juices are a great way to squeeze more veggies and fruits into your day, so why not drink ’em! Plus it’s fun coming up with different flavor combinations. Today’s recipe is the Yellow Sunshine Smoothie 2 ways 🙂
The next smoothie in the series is the Yellow Sunshine Smoothie! Super-simple and easy to make. The first one (above) is all fruit and delicious! It has more natural sugars in it of course, so I created a second version that has some veggies in it.
Well, maybe…I guess technically tomatoes are a fruit, but the second Yellow Sunshine Smoothie version has less sugar than than the first one and is a bit lower in calories. The first smoothie would also be great with some added coconut milk for a tropical taste!
I love the visual recipes, but I’m adding the recipe below for both for printer convenience. Do you like the photo recipes? I love that they are perfect for visual people like me!
Yellow Sunshine Smoothie (Version 1)
Ingredients
- ½ medium banana
- ½ cup chopped mango
- ½ cup chopped pineapple
Instructions
- Blend all ingredients in a NutriBullet or other blender. Enjoy!

I just made your cool Yellow Sunshine Smoothie / Blast version 1. I ended up adding 1/3 cup of diced carrots & added 1/2 cup of culinary coconut milk which is thicker along with another 1/2 cup of water, added 2 small lettuce leaves cut into pieces, a dash of cinnamon. It’s so good and turned out orange due to the carrots. You notice the pineapple over the mango. Since you can not taste the carrots, lettuce and the cinnamon. I was looking for another type of smoothie with fewer ingredients and I found your recipe’s on TheFitCookie.com, on Pinterest. Next, will be version 2 & Pretty in Pink version. Thank You, Sarah J.

Subbing some of the fruit for the tomatoes is a perfect way to reduce the sugar in this smoothie 😉
Love the idea of drinking the rainbow! I’ll confess I used to be a non-smoothie gal myself, too… but have really come to enjoy them lately as a quick post-workout snack. This looks like a great choice 🙂

The yellow colors are just gorgeous! Never ever have I thought to put tomatoes into a smoothie but hey, technically they are a fruit. Going to try this one out.

I have no doubt in my mind that when you slurp this drink down, you smile the entire time. I wouldn’t be surprised if you had to put a sun hat on while drinking this too – even if you’re inside – because… Well, it’s just so SUMMERY! LOL!!
