I can’t wait for spring!
The weather warmed up nicely here for a bit, giving us a taste of early spring weather. We’re very ready for spring warmth and green grass!
To usher in spring later this month, and to celebrate all those great spring holidays, like Easter, May Day, and Mother’s Day, etc. This Sparkling Strawberry Mocktail is a great drink for any spring occasion, and would even be perfect for bridal showers or baby showers!
This mocktail is so easy to make and it’s delicious and perfectly fruity for spring and summer. If you want to make it into a cocktail, we have some ideas for that, too!

How to make a strawberry rhubarb mocktail (or cocktail)
This recipe is super easy and while this is written as a single drink recipe, you can make a pitcher for a bigger batch.
- In a measuring glass, add the diced strawberries and crush/bruise them a bit to release some juices.
- Add 1 cup of strawberry flavored sparkling water
- Stir in 1/4 cup to 1/3 cup of the rhubarb drink concentrate (depending on how sweet you’d like it).
- Pour into a glass with ice and garnish with a strawberry
One thing I did mess up in the recipe video: I recommend crushing/bruising the strawberries before you add any liquid to the cup or measuring glass, it’s much easier!
I forgot that I was going to do that first originally, and added the strawberries after my sparkling water and juice concentrate, making it harder to actually crush the strawberries.

How to make this mocktail a cocktail
I can’t have alcohol these days since I get crazy awful sinus headaches from just a few sips (more than likely a histamine intolerance). But if you can have alcohol, you can easily make this Strawberry Rhubarb Mocktail a cocktail.
If you want this to be made into a cocktail, just add a shot of your favorite strawberry or rhubarb flavored liqueur to this drink.
Here are a few options:
- American Star Strawberry Vodka
- Homemade Strawberry Infused Vodka
- Whitley Neill Rhubarb Flavored Vodka (available in the UK, not sure if this is available in the US)
- Ha’Penny Rhubarb Gin
- Giffard Rhubarbe Liqueur
- Homemade Rhubarb Gin

Finding rhubarb drink concentrate
We used the IKEA rhubarb drink concentrate (dryck rabarber) for this recipe, but it’s not available online at all unless you’re willing to spend $17.50 a bottle which is ridiculous since it’s sold in IKEA stores for only $4.99.
I have long been frustrated by the fact that IKEA doesn’t ship since it’s about a 6-8 hour drive to the nearest IKEA for us. I had never been to an IKEA, but on our trip to Utah last month, we took some time to stop by the IKEA in Salt Lake City and I loved it.
We bought a few things that had been on my wish list from them for literally years. I should have stocked up on the rhubarb concentrate since it was so delicious! Now it’s gone and I can’t get anymore (sad face).
If you don’t have access to an IKEA to buy this pretty bomb rhubarb drink concentrate, then you can try a few other options.
Please note that we haven’t actually tried any of these products or recipes, and you might have to use a different ratio of syrup to sparkling water depending on the brand or recipe you’re using.

Sparkling Strawberry Rhubarb Mocktail (or Cocktail)
Ingredients
- ¼ cup diced strawberries
- 1 cup strawberry sparkling water (we used Bubly)
- ¼ cup to 1/3 cup IKEA rhubarb drink concentrate
- Ice
Instructions
- In a measuring glass, add the diced strawberries and crush/bruise them a bit to press out some of the juices.
- Add in 1 cup of strawberry flavored sparkling water
- Stir in 1/4 cup to 1/3 cup of the rhubarb drink concentrate (depending on how sweet you'd like it).
- Pour into a glass with ice and garnish with a strawberry
